SIMPLE QUARANTINE DINNERS

In light of our current quarantine and social distancing, I wanted to share some easy dinner ideas and what we’ve planned for dinner during these first two weeks at home.

It became clear at the end of last week, as the grocery shelves were clearing out, that we needed a plan for our meals during these two weeks. And a plan that was larger than our weekly meal prep. I chose these recipes because many of the ingredients overlap and use kitchen staples that we generally have on hand. Also, these are all recipes that are regularly in our rotation. And I knew the boys would eat them well. We’ll double most of these recipes or repeat them a second time next week.

SPAGHETTI  

The BEST spaghetti sauce recipe. We’ve been making this for years. I usually double this and freeze what’s left over.

FRIED RICE

Super easy and really good fried rice. We add shredded chicken to this. The boys all eat this really well.

CREAMY CHICKEN NOODLE SOUP

I first tried this soup during my postpartum meal prep last year before Isaac was born. It’s SO good and super east to make. I like the creaminess. It makes it a little more special than other broth-based chicken noodle soup recipes we’ve used in the past.

CHICKEN CHILI

Another good, easy, filling soup. Everyone here loves this. I will usually make cornbread to serve with this.

A good breakfast or dinner staple. Tip: go ahead and brown your meat the night before and put the shredded potatoes in the fridge overnight to begin thawing. Makes assembling the casserole faster.

CHICKEN TORTILLA SOUP-Another great soup option via the Two Peas and Pod cookbook. We had this for dinner and have had leftovers for lunches this week.

RED BEANS AND RICE-We use another more traditional crockpot recipe most of the time. But for a super quick version brown sliced smoked sausage in a pan, then add a can of red beans(drained) and a can of Rotel(we use mild). Let all simmer together and serve over rice. We typically serve a vegetable on the side, usually broccoli.

TACOS-You can’t go wrong with tacos. Always a favorite over here!! Or the boys make theirs as nachos with toppings.

LOADED BAKED POTATOES-We’ll use this as a dinner or lunch option with shredded ham or turkey, shredded cheese, butter, sour cream, black olives, and green onions.
